Why not try this quick and tasty mushroom stroganoff, an ideal dish for you busy people who like a good home-cooked meal! This recipe is for one (hungry) person but can easily be scaled up for more people.

 

Ingredients:

5 medium mushrooms

½ a large onion

1 tspn vegetable stock

200ml water

Dash of cream to suit taste

Pinch of salt

Optional garlic, paprika or other spice or herb of choice.

 

Chop half an onion into thin slices and fry with a small amount of oil on a medium heat. Next wash and slice mushrooms thickly and add to the pan, fry keeping them moving  for 5 minutes or so just to brown. If you are adding spice or herbs this is the point at which you should add them so the flavor really takes in the dish. Now turn up the heat, add the teaspoon of vegetable stock and pour the 250ml of water over and leave to simmer stirring occasionally. When the stock has reduced (approx. 5 minutes) add a little salt and a dash of cream, stir and allow to heat through for a further 5 minutes. Take off the heat and serve (best with rice).  It is also really easy to bulk this out with a meat of your choice or extra veggies if you don’t eat meat.
